I know the standard FM deviation is 75khz, but what should it be with SSB mode enabled and does it depend on the type of SSB mode?

Still 75. Nothing is different with that, except how the stereo signal is encoded.

I always thought the SSB mode was meant to improve multipath by concentrating more power on the carrier (making it more similar to a mono broadcast).

Without getting too advanced, what is it actually doing to improve multipath, if the deviation is the same?

Less very high frequency content. The deviation is the same, but if you look at the RF spectrum display, you'll see that it gets less wide. Mono makes it A LOT less wide.
